A mushroom toast is a delicious and delicate dish that is both easy and quick to make. Use whatever mushrooms you can get your hands on. Here, among other things, morels, shiitake mushrooms and chanterelles have been used.

Ingredients
1 shallot
1 clove garlic
500 g mixed mushrooms
0.25 bunch parsley
Butter for frying
2 dl heavy cream
1 tbsp dry sherry
4 slices light bread
Salt and pepper

Instructions
Step 1/3
Peel and finely chop the shallot and garlic. Clean the mushrooms, and cut any larger mushrooms into smaller pieces. Chop the parsley.
Step 2/3
Sauté the mushrooms in butter in a pan until they release liquid and take on colour. Add the garlic and shallot, and continue sautéing until the onions are translucent. Add a bit of extra butter along the way if necessary. Add the cream and sherry, bring the pan's contents to a boil, and let it boil down for a couple of minutes. Season to taste with salt and pepper.
Step 3/3
Toast the bread, and arrange the mushrooms on top. Garnish with parsley at the end.
